NUTRITIONAL FACTS

Step 1

Prepare the ingredients

Wash and dry the fresh produce. Dice the leeks and tomatoes. Thinly dice the garlic and shallots. Thinly slice the basil. Trim ends of the snow peas. Remove the thin string from one side of the snow pea. Cut lemon in half. Start to boil a pot of water for the pasta.

Step 2

Cook the vegetables and shrimp

Place a frying pan on medium high heat. Once hot add in 1
tablespoon of oil then combine your garlic, shallots, leeks, basil, tomatoes and shrimp in the frying pan. Cook for 2 minutes then add in your snow peas. Cook, stirring occasionally 3 to 4 minutes.

Step 3

Cook the Linguine pasta

While your vegetables and prawns are cooking, place your linguini in the now boiling water. Gently stirring to separate. Cook 2 to 3 minutes. Spoon 2-3 tablespoons of pasta water into the frying pan. Drain pasta thoroughly. Then add cooked pasta into the frying pan.

Step 4

Combine all the ingredients

Reduce the heat on your frying pan to medium low and add in the butter and then squeeze one half fresh lemon over top. Cook stirring frequently to thoroughly coat the pasta, 1 to 2 minutes or until thoroughly combined. Season with salt and pepper to taste.

Step 5

Serve

Plate your finished Shrimp and Snowpea Linguini in a bowl or dinner plate. Garnish with fresh parmesan cheese. Enjoy and don’t forget to take photos!
