A quick salmon dish perfect for a weeknight dinner. The salmon is covered with slices of tomatoes topped with parmesan crusted directly on the fish. Serve with a side of roasted assorted peppers and the creamy sauce pairs perfectly.

COOKING INSTRUCTIONS

Step 1

Preparation and setup

Slice the tomatoes, finely chop the parsley, cut the lemon into half, cut and discard the ribs and seeds from the assorted peppers then finely slice the peppers into rings. Squeeze half a lemon into the cream sauce and mix thoroughly.Preheat the oven to 375 C.

Step 2

Dress the salmon

Toss the salmon in the seasoning then place on a greased baking pan or aluminum foil lining. Top with tomato slices and sprinkle with parmesan.

Step 3

Bake the salmon

Bake the salmon in the preheated oven until the center is opaque, and the parmesan cheese is lightly browned on top. It should take about 20 minutes.

 

Step 4

Combine the peppers and tomatoes

While the fish is baking, combine the sliced bell peppers, parsley, and olive oil in a bowl. Squeeze in the juice of the other half lemon. Stir to thoroughly combine. Bake for 8-18 minutes or until the peppers are soft to your bite.

Step 5

Plate yours dish

Put a large spoonful of the mustard creme in the center of your serving dish, place the salmon filet on top. Garnish with your roasted assorted peppers. Bon appetite.
