2 Pork Chops
12oz Potatoes
2oz Aged White Cheese
6 Asparagus Stems
1tbsp Dry rub (for the pork)
2oz Cream
1oz Maple chilli sauce
4 Garlic Cloves
2 Shallot
1/2 Onion

Prepare the ingredients
Peel and slice the onion and shallot, peel the garlic cloves, wash and cut the potatoes into quarters. Season the pork with the dry rub. Add a pinch of salt and pepper to your taste.
Make the confit
Make Confit: combine the shallot, onion, and garlic, 1 tbsp of oil in a small pan on medium-low heat. Cover with lid. Simmer for 4-5 mins then set the confit to the side to cool.
Cook the Potatoes
Place the potatoes in a pot of water. Add 1 teaspoon of salt. Cook on medium heat for 15 minutes. Once cooked, drain the water out and add in the cream and cheese. Mash the potatoes, cream and cheese.
Sear the pork chops
Place a frying pan on medium heat. Add the chops and sear on all sides, about 4 to 6 minutes per side. Do not flip them over until properly seared on each side. Check the internal temperature with a thermometer to ensure it reaches 145 F.
Prepare the asparagus
While the pork chops rest, cook your asparagus in boiling water for 30 seconds to one minute. Drain the water out and add in the maple syrup. Simmer for one more minute. Turn heat off and set aside.
Serve
Serve the potatoes, pork chops and asparagus on a dinner plate. Enjoy!
