250g Shrimp
1 Green Onion
100g Asparagus
80g Cherry Tomatoes
1 Yellow Bell Pepper
2cups Cauliflower Rice
40ml White Wine
1 Onion
1 tbsp Olive Oil
1 sprig Thyme
4 gram Chives
500g Shrimp
2 Green Onion
200g Asparagus
160g Cherry Tomatoes
2 Yellow Bell Pepper

Prepare the ingredients
Chop the onion and the green onions. Remove leaves from stem of thyme. Cut the hard woody ends from the asparagus.
Cook the asparagus
Cook the asparagus in a pot of boiling water for 3 minutes. Rinse under cold water and set aside.
Prepare the cauliflower rice
Add 1 Tsp of olive oil (double for 4 people) to a pan over medium heat, juice the lemon over it and add green onion, onions, cauliflower rice and half of the thyme. Sauté the mixture for about 2-3 minutes. Season with salt and pepper and set aside.
Sear the shrimps
Peel the shrimps and heat 1 Tsp of olive oil (double for 4 people) in a pan over medium-high heat. Season shrimps with salt and pepper. Add shrimps to the pan and sear 3 minutes on each side. Deglaze with the cooking wine.
Prepare the tomatoes
Dice the cherry tomatoes. Mix with 1 Tsp of olive oil (double for 4 people) and remaining thyme. Season with salt and pepper.
Serve
Serve the cauliflower rice with the asparagus, shrimps, and tomatoes.
