A quick and easy delicious summer dish. It is built on fresh local vegetables accompanied with refreshing citrus of lemon. Garnished salty with Chia (or sunflower seeds).

1 Chicken Breast
10g Flour
1cup Basmati Rice
1tsp Mixed Dry Herbs
1 Garlic
1/2 Chicken Broth
1 Lemon
1oz Capers
2sprigs Parsley

Prepare all ingredients
Mince the garlic and parsley, cut lemon(s) in halves. Slice one half so there are 2-3 pieces for each serving. Save the other half for later. Cut the chicken breast into 1/2 inch cubes or medallions. Season with salt and pepper to taste. Dredge the seasoned chicken in flour. Shake off excess flour. Set aside for step 3.
Cook the rice Mix rice, water, and a pinch of salt in a pot then bring to a boil. Stir once then cover and reduce heat to lowest setting. Simmer for 15 mins. Remove from heat. Add one part butter, herbs and squeeze in the half lemon.
Cook the Chicken
Heat oil in a skillet and pan-fry the chicken bits until golden brown on both sides, about 3 mins per side. Work in batches to not crowd skillet, adding oil as needed. Remove chicken once cooked and set aside. Do not clean the pan.
Make the sauce
In the same pan used for the chicken, drop the butter and stir-fry the garlic. Pour in the broth. Scrape and dissolve any brown bits from the bottom of the skillet. Stir in the lemon slices and capers. Boil for 2-3 minutes then stir in the parsley and let sit for a minute.
Plate Your Dish
Form rice into a small circular bowl or small rectangular dish (e.g butter dish) to fill it up. Turn upside down on a dinner plate and gently remove the bowl/dish. Arrange the chicken medallions on the rice, spoon sauce over each portion.
