1         Avocado
1         Red Peppers
6         Strawberries
1/2cup Red Quinoa
1/4       Red Onion
20g       Salted Chia Seeds (or Sun Flower seeds)
2oz       Feta
4oz       Honey Lemon Chia Dressing

80g     Salad Mix
2         Avocado
2         Red Peppers
12       Strawberries
1cup   Red Quinoa
1/2       Red Onion
40g       Salted Chia Seeds (or Sun Flower seeds)
4oz       Feta
8oz       Honey Lemon Chia Dressing

COOKING INSTRUCTIONS

Step 1

Prepare all ingredients
Preheat your oven to 350F and wash all fresh produce. Then, thinly dice the red pepper, finely chop the red onion, cut the strawberries into halves and cut avocado into chunk size pieces. Season the chicken with salt and pepper to your taste.

Step 2

Begin to Cook the Chicken
Place an oven-safe frying pan on medium heat heat then once it is hot, add 1-2 teaspoons of oil. Place the seasoned chicken thigh skin-side down in the pan and sear for 2-3 minutes. Transfer to the oven to cook for 7 to 10 minutes or until cooked through.

Step 3

Finish Cooking the Chicken
Carefully remove the chicken from the oven. Ensure that the chicken is fully cooked and the skin side is crispy (not burnt). Place chicken thigh on the cutting board and cut into chunks. Set aside to place on top of the salad in step 5.

Step 4

Combine all the ingredients
Place your lettuce mix, salad dressing and quinoa in a large mixing bowl and gently toss. Once mixed, begin to garnish top with avocado, red peppers, red onions, strawberries, feta and lastly the Salted Sunflower (or chia) seeds.

Step 5

Plate Your Dish
Place your salad in a salad bowl of dinner plate. Pile high. Place chicken thigh on the top of the salad. Bon Appetit!
