  3. 100g Mushrooms
  4.   25g Spinach
  5.   2oz Gorgonzola
  6.       1 Onion, Red

  3. 200g Mushrooms
  4.   50g Spinach
  5. 4oz   Gorgonzola
  6.       2 Onion, Red
  7.       2 Egg

COOKING INSTRUCTIONS

Step 1

Prepare all ingredients and Preheat Oven to 375 degrees.

Bring a pot of salted water to boil. Wash and dry all fresh produce. Trim and slice the spinach, slice the mushrooms and the onions. Mix Egg and Gorgonzola in a bowl and whisk until thoroughly combine and set aside.

Step 2

Cook the Lasagna

Add the lasagna noodles to the pot of already salted water. Cook the lasagna noodles until it is “al dente”. Drain and set aside

Step 3

Begin to Sauté the Vegetables

Heat a non-stick pan over medium heat. Once hot, add the butter and onions. Sauté the onions for 2 – 3 minutes then add the mushroom, continue to stir for another 2-3 minutes. Add the spinach and cook while continue to stir for 1 minute, season with salt and pepper to taste. Remove from Heat.  

Step 4

Combine All Ingredients and Begin to Roll

Add the sautéed vegetables to the egg and gorgonzola bowl. Mix to combine. place the Lasagna noodle on a wooden board / cutting board, spread 2 tablespoons of the combined vegetable stuffing on one end. Roll and place in a greased baking pan.

 

Step 5

Finish Rolling and Place Lasagna Rolls in the Oven

Repeat the rolling process, until you have completely rolled all the lasagna noodles and placed in the pan. Coat the Rolls with tomato sauce and sprinkle with parmesan cheese. Place in the oven and cook for 30 minutes. Once cooked through, remove from the oven and let stand for 5 minutes before serving.

Step 6

Plate your Dish

Place 3 lasagna rolls in each serving dish and enjoy!
