This dish earned the 'Famous' name back when we sold it at the local farmer's markets. We have maintained the typical creaminess of the dish with its bold and aromatic flavors of a variety of mushrooms.

1 cup Arborio Rice
1 Shallot
30ml Cream
60g Mushroom
40g Feta Cheese
1 Green Onion
2 cup Arborio Rice
2 Shallot

120g Mushroom
80g Feta Cheese
2 Green Onion
Prepare all ingredients
Dice the shallots, chop the mushrooms, cut the green onions in 2 inch diagonal pieces. Crumble the Feta cheese in a small bowl and also split in two batches.
Cook the Fresh Mushrooms
Place your pot on medium heat, once warm add in 2 tablespoons of olive oil then stir in your diced shallots and fresh mushroom blend. Cook for 2-3 minutes until they are well sautéed. Leave on the heat.
Cook the Risotto (About 15 minutes)
Add the risotto to the sautéed fresh mushrooms. Stir well to ensure all the rice is lightly coated in oil. Stir in half the mushroom stock into the risotto and give it a moment to simmer and absorb. Stir in remaining stock and let it simmer and absorb.
Season the Risotto
Use a teaspoon to taste and check if risotto is soft. Once the risotto is soft to the centre, season with salt, pepper, cream, and 1⁄2 of the feta cheese. Let it all simmer for about 1 to 2 minutes. Remove from heat and let stand another 3 to 5 minutes.
Plating Your Dish
Scoop the risotto into a bowl and pile high, crumble remaining feta cheese over top and garnish with the green onion.
