Prepare the ingredients
Dissolve the cube of chicken stock in the water for broth. Peel and finely grate the ginger. Finely chop the onion and garlic. Roughly chop the cilantro and set aside. Cut the chicken into pieces of about 3cm. In a bowl, mix the spices mix, the ginger and a drizzle of oil. Add the chicken to the spice mix and toss well to coat.
Cook the rice
Bring a pot of water with 1.5 cups of water to a boil (double for 4 ppl.). Pour the rice, cover and cook over low heat for 10-12 minutes. Bring a pot filled with water to a boil for the asparagus
Make the curry
Heat a drizzle of oil in a large pan and cook the onion and garlic for about 2-3 minutes until soft and golden brown. Add the tomato paste and cook for 1 minute.
Cook the chicken and asparagus
Add the chicken to the pan and add the chicken stock. Mix, cover and cook for about 12-15 minutes until the chicken is cooked through. Add the asparagus to the boiling water and cook for 5 minutes until tender, then drain. Once the chicken is cooked, off heat, stir in the sour cream.
