Prepare ingredients and begin to cook the meats
On a chopping board, dice the shallot and squash the garlic with the blade of a knife, just to bruise it. Cook pancetta: Heat the frying pan to medium heat. Add the pancetta, chicken and garlic. No oil required. Stir-fry the pancetta till it is golden crisp and the chicken is fully cooked.
Continue to cook pancetta and chicken
Drop the butter and shallots into the frying pan. Stir frequently. Once butter has melted, reduce the heat and simmer for 5 minutes. Now the garlic has imparted its flavor, so take it out with a slotted spoon and discard. Leave pancetta/chicken mix in the pan on very low heat.
Make egg-cheese mixture
Fill a pot 3⁄4 full with water and add 1 teaspoon of salt and place on medium-high heat. Set a little cheese aside for step 6 then finely grate most of the remaining parmesan cheese. Beat in the eggs. Season mix with freshly ground black pepper and set it aside.
Cook the Pasta
Add the pasta to the boiling water, cook uncovered at a constant simmer for 1-2 minutes or until al dente (just cooked). When pasta is ready, lift it from the water with a pasta fork or tongs and place in with the pancetta. Save the rest of the pasta water.
Mix the carbonara
Remove the pasta mix off the heat. Quickly pour in the egg-cheese mixture. Use tongs to lift up the pasta so that it mixes easily with the egg mix. It should thicken not scramble. Ensure pasta is coated then add a couple tablespoons of pasta water to keep it saucy.
Plating your dish
Twist the pasta on to the serving plate or bowl. Serve immediately with a little sprinkling of the remaining cheese and a grating of black pepper. If the dish gets a little dry before serving, splash in some more hot pasta water and the glossy sauciness will be revived.
